The perfect cookie should be heavenly warm with a chewy centre, well that is exactly how I like them. While on a gluten free diet finding the perfect cookie recipe was a challenge.
There are plenty of gluten free cookie recipes available online, but none quite hit the spot. Eventually I found the recipe I had been longing for ever since going gluten free, not only do the cookies taste great and have a chewy centre but its reassuring knowing the ingredients which have gone in to making them.
Prep Time – 30-45 Minutes
Cooking Time 15-20 Minutes
Makes approximately 16 cookies
Ingredients:
- 227g Butter
- 362g Gluten free plain flour (I use Doves Farm brand)
- 340g Caster sugar
- 200-340g Chocolate chip chunks (I like to use a mixture of white and milk chocolate chips)
- 1 x Eggs
- 1 x Egg yolk
- 1 1/2 Teaspoons of Vanilla extract
- 2 x Tablespoons of Whole milk
- 1 x Teaspoons of Xanthium gum
- 1 x Teaspoons of baking powder
- 1 x Teaspoon of Salt
Method:
- Pre heat the oven at 180 degrees
- Carefully melt the butter in a saucepan over a low heat
- Combine the gluten free flour, xanthium gum, baking powder and salt together in to a bowl
- Mix the sugar in with the melted butter
- Add the egg, egg yolk, vanilla extract and milk to the sugar and butter ensuring it is mixed well
- Slowly mix together the flour mix and chocolate chips to the sugar, butter and egg
- Once the mixture has been fully combined chill the mixture in the fridge until it is firm
- Make 1 cm thick cookie shapes out of 60g balls of mixture
- Place the cookies on to a baking tray
- Bake the cookies for 14-20 minutes making sure they are golden brown – the baking time may vary depending on the size of the cookies or type of oven
